Celery


How to store:

Store celery cold and moist, 32°-40°F—as cold as possible without freezing–and 95 percent relative humidity. Cold and moist storage is a challenge. A refrigerator is cold but the air is dry.

Wrap celery in a moist cloth or paper towel and place it in a perforated plastic bag in the vegetable crisper section.

Celery with the leaves attached will keep in the refrigerator for a few days, without the leaves up to two weeks.

If celery is stored too warm or too cold, the quality will deteriorate and stalks will turn yellow and pithy.
A favorite farm recipe:

Ingredients​

2 bunches of celery (can include leaves)

1 lime, skin removed (optional, for better taste)*
Directions

Prep the celery for juicing by chopping off the base and tops (can use the tops if you would like) of the stalks of both bunches.

Place the celery stalks into a colander in your sink. Wash the celery and pat it dry.

Run the celery and lime through the feeding tube of juicer.

Serve the juice immediately, or keep any leftovers in an air-tight jar in the fridge. Consume within 3 days of juicing.
Celery tastes like an earthy green onion. The greens can also be eaten.
