Harvest Celery

Farm Recipe:
Celery and Apple Salad

Ingredients:

4 celery stalks, thinly sliced

2 apples, diced
-
1/4 cup walnuts, chopped

1/4 cup raisins
-
Juice of 1 lemon

2 tablespoons olive oil

Salt and pepper to taste
Instructions:

In a large bowl, combine celery, apples, walnuts, and raisins.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

Pour dressing over salad and toss to coat evenly.

Serve chilled as a refreshing side dish or light lunch.

When is it "pick-perfect"?
Harvest celery when the stalks are firm, crisp, and reach about 8-12 inches in height. Typically, this occurs 3-4 months after planting.

How to Harvest:

To harvest celery, grasp the base of the stalk near the soil line and gently pull upward. Use a sharp knife or pruning shears if necessary.

Cut at ground level to avoid damaging neighboring plants.
Storage:

For short-term storage, place celery stalks in a plastic bag in the refrigerator crisper drawer. Ensure they remain moist but not wet by wrapping them in a damp paper towel.

For longer storage, blanch celery and freeze it. Alternatively, chop and freeze celery for use in soups and stews.
