Harvest Peaches

Farm Recipe:

Peach Cobbler

Ingredients:

  • 6-8 fresh peaches, peeled, pitted, and sliced

  • 1/4 cup granulated sugar (adjust based on sweetness of peaches)

  • 1 tablespoon lemon juice

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, melted

  • 1/4 cup boiling water

  • Ground cinnamon (optional, for sprinkling)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x9 inch baking dish.

  2. In a large bowl, combine sliced peaches with 1/4 cup sugar and lemon juice. Stir to coat evenly and let sit while preparing the batter.

  3. In another bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Add melted butter and stir until combined. The mixture will be crumbly.

  4. Spread the batter evenly over the peaches in the baking dish.

  5. Pour boiling water over the batter. Do not stir.

  6. Bake in preheated oven for 40-45 minutes, or until the top is golden brown and the peach filling is bubbly.

  7. Remove from oven and let cool slightly before serving. Sprinkle with ground cinnamon if desired.

When is it "pick-perfect"?

Peaches are ready to harvest when they have developed full color and a slight softness at their tip. They should come off easily from the tree with a gentle twist.​

How to Harvest:

  • Gently twist the peach upwards and give it a slight tug.

  • If the peach comes off easily from the tree, it's ready to be harvested.

  • Handle peaches carefully to avoid bruising.

Storage:

  • Pick peaches with their stems attached to prevent damage and extend shelf life.

  • Store peaches at room temperature until ripe, then refrigerate to prolong freshness.
