In this email you will enjoy a behind the scenes look into what we have been up to the last couple weeks at Mortimer Farms.
As ranchers, we take our role as caretakers seriously. At the ranch, we're responsible for wildlife, animals, land, the environment, and natural resources on the public lands we lease. This entails land maintenance, water conservation, and wildlife care. In return, we rent the land, providing a home for our cattle.
At the ranch, our cattle are purposefully rotated between pastures to graze on grasses and brush, benefiting the land and reducing wildfires, erosion, and climate impact. Responsible cattle grazing plays a vital role in proper land management. It fosters native grassland growth, removes fire-prone brush, and enhances the environment. Cattle also enrich the soil and capture carbon, making them environmental stewards. When cattlemen harmonize with nature, remarkable things occur.
This week we moved the herd from one pasture to the next. The move took four days.
At the farm and at the ranch headquarters, the cattle are still eating the left-over pumpkins from Pumpkin Fest. The primary health benefit for cattle is that pumpkins contain a high concentration of energy; around 70 to 75 percent total digestible nutrients on a dry matter basis. This makes them an excellent supplemental energy source. Pumpkins also contain around 12 to 14 percent protein.
We finished decking the halls at the Market & Deli with Christmas cheer! These trees! These gifts! This time of the year!

We are creating a new Windmill Kitchen menu. We tasted 6 options made by our AMAZING FARM CHEFS and now it's time to pare it down to our 4 menu items. The menu will go live next weekend! This is the Mortimer Burger (green chili, onion ring, Mortimer beef, cheese, amazing)!
We are thinning the branches of the tomato vines in the greenhouse to enhance light penetration, and we are integrating the vines’ new growth into the trellis. The trellis allows us to use vertical space in the greenhouses to grow food all winter long. It is so awesome to harvest tomatoes all year round at the farm!
